Indian desert – Jalebi               

Jalebi is a very unique sweet. Its shape is spiral. It’s only eaten in marriages, and on special occations because it is full of fat. People can also buy it from shops on other days but, not regularly. The colour of the sweet is orange. The colour is not artificial, it comes from saffron. It’s also very juicy. The juice consists of rose water and only the flavor of cardamom. It’s my favorite sweet.

 

RECIPE

2 cups All purpose flour (maida)

1 1/2 tbsp fine grained semolina or rice flour

1/4th tsp baking powder

2 tbsp curd (plain yogurt)

1 1/4th cups warm water

1/2 tsp saffron threads, slowly dry-roasted and powdered

3 cups sugar

2 2/3rd cups water

1/2 tsp green cardamom seeds powder

1 1/2 tbsp kewra water or rose water

Ghee or vegetable oil for frying
